Just saw this post. No Chinese imput from my office. I think it is becasue they have different forms of starch.
In the food industry, there are different commercial secrets. Additive to keep the freshness of the products is one of them. In US market, the bread sold in supermarket often contain other polymers, like PEG. They do not privide nutritional value (cannot be ingested) but to keep the food in certain state.
