I agree that it has to do with desensitization. Focusing on the black dot potentially weakens the sharpness signal outside the macula. I don't think it's coincidental that the three colors used here are cyan, magenta, and yellow. The CMYK (cyan, magenta, yellow, black) system is well-known as a counterpart to the RGB (red, green, blue) system. In other words, perhaps the desensitization of the signal sharpness blurs the three colors together. Cyan + Magenta + Yellow = Black, so light shades of each = gray. The colors can be carefully selected to achieve the desired level of grayscale.
